Try this: Toss a big bowl of fresh lettuce, cucumber and cherry tomatoes with a generous drizzle just before serving, then finish with toasted nuts and shaved Parmesan.

The recipeCucumber coins under a honey-vinegar brine, chives in the jar, ready by morning. Five minutes now, magic tomorrow.
How to make it
- Slice the cucumber into coins and pack into a clean jar with a few snipped chives.
- Pour the honey-vinegar dressing over until just covered; top up with a splash of water if needed.
- Lid on, shake once, into the fridge overnight.
- Eat with everything for two weeks — if they last two days.

How to make it
- Slice the zucchini and portobello thick, the peppers into wide flats.
- Brush both sides with the dressing; rest ten minutes.
- Griddle on high, three minutes a side.
- One more brush of dressing as they come off the heat.
