How to make it
- Tear the romaine into a cold bowl — hands, not knife.
- Halve a handful of cherry tomatoes; slice the cucumber thin.
- Pour 3–4 tablespoons of honey-vinegar dressing down the side.
- Toss up from the base and eat immediately.

How to make it
- Halve the romaine lengthwise, keeping the stem so it holds.
- Sear cut-side down in a hot, lightly oiled pan for two minutes — charred, not cooked through.
- Loosen a spoonful of basil pesto with olive oil and drizzle over.
- Finish with a little honey-vinegar dressing and coarse pepper.
