Where to use it
- Into foaming butter with cremini mushrooms — whole sprigs, seared hard.
- Between cherry tomatoes as they slow-roast — the oil turns fragrant.
- Under any tray of roasting vegetables, perfuming from below.
- One sprig into a simmering soup or dal, twenty minutes, then out.
- Picked leaves over fried eggs, straight at the table.

The shortlistHeat plus fat plus thyme equals flavour that tastes like effort. It isn't.
Where to use it
- Warm the oil with a sprig before portobellos hit the pan.
- Butter-baste seared portobello steaks — tilt the pan, spoon, repeat.
- Steep a sprig in warm honey for a week of better drizzles.
- Into stock as it simmers — the quiet backbone of every soup.
- A bruised sprig dropped into the honey-vinegar dressing bottle overnight.
