Order by 10 PM and your mushrooms are cut against your order in the morning, then delivered the same evening. Delhi & Gurgaon only. The farm rests on Sundays: orders placed between Friday 10 PM and Sunday 10 PM ride Monday's van.

The recipeCremini halved and seared in butter with thyme, chives over the top. Ten minutes, serves two.
How to make it
- Halve the cremini and dry them well — water is the enemy.
- Butter foaming, mushrooms cut-side down, a thyme sprig in.
- Three minutes untouched, then toss once.
- Salt and snipped chives off the heat.

The recipeCremini and white oysters browned deep, cream and thyme finishing it. Twenty minutes, serves two.
How to make it
- Boil 200g pasta; save a cup of the water.
- Sear the sliced cremini and torn white oysters until deeply browned.
- Thyme, then a pour of cream, then the pasta — loosen with the water.
- Black pepper like you mean it.
