Five places rosemary belongs.
The loudest herb in the box — use it where there's heat and char.
The shortlistRosemary wants fire: griddles, ovens, hot oil. Never raw.
Where to use it
- Onto the griddle in the last minute with bell peppers — instant smoke.
- Under a tray of roasting portobellos, stems and all.
- Into hot oil before potatoes fry — out when it stops crackling.
- Strip the stem bare and use it as a skewer — paneer, onions, anything.
- Chopped fine into flaky salt — rosemary salt for the whole month.

The rosemary weekend card.
Big trays, low ovens, whole sprigs — rosemary is a Sunday herb.
The shortlistOne sprig is enough. Two is a statement. Three is a mistake.
Where to use it
- Over a roast tray of cremini and cherry tomatoes — one sprig, low oven.
- Pressed into focaccia dough with sea salt before it bakes.
- Steeped in warm ghee for roast-day drizzling.
- Held over the pan lid as mushrooms finish — controlled smoke.
- Into the honey jar for winter — rosemary honey over fried cheese.
